Bacon Wrapped Asparagus
How do you get those kiddies to eat their vegetables? Wrap them in bacon! I’m going to call this a “healthy recipe” because there’s asparagus in it. This one’s real easy to prepare and even easier to cook.
Start off with a bundle of asparagus, cut off the cut ends and clean. Pat dry, as we will be coating these with oil. Get yourself some olive oil and grab 5 or 6 stalks, and lightly brush them with oil. Sprinkle a little black pepper and garlic powder on them. Now, starting from about an inch from the bottom, start wrapping the stalks together with a piece of bacon. You want to do this tightly, slightly overlapping each wrap.
The result should be a cute little bunch that resembles a bouquet of flowers. Sprinkle a pinch of black pepper, garlic powder, and cayenne pepper on top. You can cook these in the oven at 350° or on the bbq. I chose the bbq because everything is better on the grill. Here’s where I messed up. These should take somewhere between an hour and two hours of indirect heat to cook the asparagus and crunch up the bacon. I set the grill up and left for half an hour, coming back to find out that it has flared up and the asparagus was burning.
Any way, moral of the story is keep an eye on your bbq! They were still tasty, just a few we had to cut off the burnt pieces.
These are definitely a tasty, easy to make appetizer, but as I have to go by taste I’ll give these a 7 out of 10. Next time when I don’t burn them I’m sure we’ll be in the 8-9 range.
