Korean Style Burgers

Ok, so this was a craving I got from watching some re-runs of The Great Food Truck Race on Netflix.  The guys from Seoul Sausage killed it with Korean burgers and fried rice balls (yea, I’ll be making those soon) and got me hungry every episode.

I don’t know much about Korean cooking, but after researching a few recipes I came up with my own version.  It features an awesome burger cooked on the flat top with a homemade Korean BBQ sauce.  It was hard for me to have a burger without cheese, but I definitely couldn’t make a burger without bacon.

Ingredients:

Burgers

2.5-3 pounds of 80/20 ground beef

2/3 cup chopped scallions

1/4 cup brown sugar

2 tablespoons finely chopped fresh ginger

4 cloves finely chopped garlic

1 teaspoon black pepper

1/2 cup Soy sauce

1-1/2 tablespoons sesame oil

 

Korean BBQ Sauce

1 tablespoon finely chopped fresh ginger

3/4 cup Soy sauce

1/2 cup brown sugar

1/4 cup rice vinegar

4 cloves finely chopped garlic

Sprinkle of black pepper

1 tablespoon honey

About 2 tablespoons corn starch

 

Also needed

Cabbage

Butter

Brioche buns

Bacon

Sugar

 

Korean Style Burgers

Start off by adding all the ingredients for the burger into a small bowl.

 

2/3 cup chopped scallions (should be around 10 stalks)

1/4 cup of packed brown sugar

2 tablespoons of ginger

4 cloves of garlic

1 teaspoon ground black pepper

1/2 cup Soy sauce

1-1/2 tablespoons of sesame oil

Mix everything together

Place ground beef in a large bowl and pour mixture over it

Mix well by hand

Place in fridge, covered until ready to use.

 

To make the BBQ sauce:

Set a large frying pan on low heat.

Add all ingredients except the corn starch.

 

1 tablespoon finely chopped fresh ginger

3/4 cup Soy sauce

1/2 cup brown sugar

1/4 cup rice vinegar

4 cloves finely chopped garlic

Sprinkle of black pepper

1 tablespoon honey

Mix with a wooden spoon and cook on low for about an hour.

Add about 2 tablespoons of corn starch, mixing it in until sauce thickens.  Raise heat to medium to bring to a boil and then lower temperature again.

Taste the sauce, and add sugar and honey to desired sweetness.

Chop up some cabbage

Add to sauce and stir in, cooking on very low heat.

Get your flat top or pan going at about 300°.

(For each burger) Add three strips of bacon.  Let the bacon cook a few minutes.  We’re going to use that grease to cook the burgers.

Grab a handful of meat, ball it up a little smaller than a softball and smush it down in the bacon grease.

Use the grease to cook that burger.

When your burger is almost done, throw some butter down on a clean section of the grill.

Place your buns face down and let them brown.

Remove buns and bacon

Pile all the deliciousness up and make yourself a killer burger.

Man, I’m glad that I made 3 pounds of burgers cus I’m gonna eat them all.  These came out great!  I’m always looking for new additions to my burgers and have done several varieties with green onions but this has been the best by far.

I give this recipe a 10 out of 10 and HIGHLY recommend you try it.  I think I may cook a couple on the BBQ too (I chose to cook these on the flat top because 1- it was about 95 degrees out and 2- it’s much easier to cook your sauce, bacon, and burgers all in the same room).
