Pulled Brisket Sandwich
My fiance has been wanting to try her Meema’s “BBQ beef sandwich” recipe for a while now, but the problem is that it requires leftover brisket. We all know that’s a rarity, so I decided to surprise her and save half a brisket after smoking it. The problem was, when we finally got around to making it, we couldn’t find the damn recipe! So here is what I threw together that is definitely worth sharing.
About 2 pounds of cooked and cooled brisket
2 small cans tomato paste
1 cup chicken broth
1/4 cup brown sugar
A few drops of Soy sauce
Sprinkle of garlic powder
Start with the leftover cold brisket. Trim the fat, and put it in a ceramic dish in the oven at 350° for about 5 minutes.
Add the 2 cans of tomato paste on top, and return to the oven for 5 minutes.
Remove from oven, and pull the brisket by hand. It shouldn’t be too hot yet.
Add brown sugar, Soy sauce, garlic powder, and chicken broth.
Cover with aluminum foil and return to oven for 10 minutes.
Remove, mix everything together well, and cook an additional 30 minutes to let all the flavors be absorbed.
Grab yourself some buns, heat up a griddle or pan with some butter and lay them face down until they brown up a little.
Put the sandwich together and enjoy!
This tasted great! Not quite like Meema’s (hers comes out much sweeter, with ketchup and more brown sugar). For a thrown together sandwich I was very happy with the outcome. I give this a 9 out of 10.
