Bacon Cheeseburger Pie

A delicious combination of dinner and dessert, I present to you the Bacon Cheeseburger Pie.  While there is nothing dessert about this besides the shape, you’ll want to eat this one for breakfast, lunch, dinner, AND dessert.  This recipe combines some of my favorite things – weaved bacon, a huge burger, and lots of cheese.

You’re going to need a few things for this recipe.  First of all, three pie tins.  Secondly, a very large spatula.  And third, lots and lots of bacon.

    1. Start off with some good bacon. Go for something that is on the thick side and pretty straight
    2. Lay out your bacon side by side, on top of a piece of aluminum foil or wax paper
    3. Make sure the bacon is just a little longer than the pie tin
    4. Pull back every other strip halfway, and lay another strip down perpendicular to the others
    5. Weave in the rest of the bacon
    6. Place one pie tin on top of the bacon weave
    7. Pull up the edges and flip over
    8. Remove the foil, tighten up the weave and wrap three more slices around the edge to make that "crust"
    9. Put another tin on top
    10. Place in a deep tray and put in the oven at 350
    11. Get out your third pie tin and your ground beef
    12. Season well
    13. Mix up by hand, and push into the tin to form the patty
    14. Fire up your bbq and toss that bad boy on
    15. Cook over the flames for a quick sear
    16. Remove after flipping and cooking. Notice the shrinkage, it's ok we'll fill the gap with bacon
    17. Throw the fries in the oven
    18. Grab another 6 strips of bacon and chop up as thin as possible
    19. Toss in a frying pan on medium heat
    20. Cook bacon until almost crispy, drain fat and add onion
    21. Add apple cider vinegar, brown sugar and maple syrup. Cook 10 minutes or until done
    22. Remove the top pie tin and pat off some of the fat. Continue to cook, putting the oven on broil to crisp up the bacon if necessary
    23. Put the second tin back on and flip over. Gently peel out the bacon while tapping the bottom
    24. Admire the bacon crust
    25. Add a layer of cheese
    26. Next, place down the patty
    27. Add the bacon and onions
    28. Lay down some fries and make it look fancy
    29. Slice up some more cheese and lay that down
    30. Throw in the oven for 10 minutes
    31. Add some bbq sauce on top. Hint - put some sauce in a squirt bottle to make it all pretty
    32. Slice up and enjoy!
