Broccoli rabe has been one of my favorite greens I guess mostly because I cook it with tons of garlic and oil. There are a few ways to cook broccoli rabe, including boiling it, then blanching it (or not), just sauteeing it, adding butter, this or that, but this is another simple, one pot recipe. (Except for the sausage pan).
So let’s get started. All you’ll need for this one is a large pot and a cake pan.
Broccoli Rabe with Garlic and Sausage
Start out by heating your oven to 425. You can cook the sausage however you like, but I find that the easiest way to do it it by putting them in a deep metal pan like a cake or brownie pan. These will probably cook about 45 minutes
Clean the bunch of broccoli rabe by cutting an inch off the ends and discarding. Also remove yellowed and brown pieces
Clean your garlic (you can add more or less to taste). I like to leave large chunks but you can slice up smaller if you would like
Add the oil in the large pot on low-medium heat. Bring up to temperature and add garlic. Cook til starting to brown
Rinse and add broccoli rabe to the pot. Be careful, as the water hitting the hot oil will cause some popping
Add salt, pepper, garlic powder, crushed red pepper and cover. Stir every 15 minutes
Check on the sausage once in a while, turning them and poking holes. Keeping them against the edges will help them to crisp up on the outside
After about an hour when the broccoli rabe has turned a darker green and the thickest part of the shafts are able to be broken by a fork you can slice up the sausage and stir in
Serve immediately, top with some grated parmesan and crushed red pepper flakes
