Garlic Butter Herb Salmon

    Welp, at some point I have to do a seafood recipe, right?  And what better to start with than some Garlic Butter Herb Salmon?  Personally I don’t like seafood but I can cook it.  I’ll eat shrimp at hibachi restaurants but that’s pretty much it.  I have always had fish as pets, so maybe that has something to do with it?

    But when your woman wants you to cook her some salmon, you cook her some salmon.  So here it goes.  And I may add, two days later my oven still smells… 

    I like garlic, I like butter, hell I even like most herbs.  But I need to find something besides fish to put this on!  But for those of you that do like fish, I’m sure you will enjoy this Garlic Butter Herb Salmon recipe.

    And the clean up is easy, all you need is some foil and a pan.  And maybe some Easy Off if you don’t like the smell either.

    So there’s actually a pretty funny story that goes along with this.  I always use my iPhone for taking food pictures, and it just so happens that while the salmon was in the oven, I fed my pet fish.  I gave my Pacu a fresh blackberry because he loves fruits, berries, nuts, worms and basically anything I give him so I try to switch it up.  (Yea, I feed my pets pretty well too).  I just happened to take a video of him gobbling down the blackberry.  Anyway, the next day I’m at work showing one of the guys pictures of what I cooked the night before as I usually do, and right there in the middle of the photos is the video of my fish (who is about 13 or 14 inches long) and I tell the guy “yea my fish died so I ate him”.  I showed him the video of my fish eating the large blackberry and his reaction was pretty much what you’d expect.  He asked why the fish died, and I brushed it off like it must’ve been something I fed him.  Since I don’t like eating fish, I guess he thought that I was saying the fish tasted bad.  I thought he knew I was kidding, and the next day he comes in and yells “I know why it tasted shitty!”

    “What are you talking about?”

    “Your fish, I know why it tasted like shit.  It was the blackberry.  It must’ve poisoned him and you were basically eating his shit.”

    “Wait, you thought I was serious?  Why the hell would I eat my dead fish?”

    Welp, I had mixed feelings at first.  Am I the type of guy who would eat his own fish?  I love bacon, but if I looked a pig in the eye I wouldn’t be able to eat it.  And the same goes for cows.  I’ve raised this fish for about 5 years from the size of a dime to over a foot long.  But then I realized, you know what, I’m the type of guy who can tell a complete bullshit story and be believed, no questions asked.  And that I am proud of.

    Instructions
    1. Start off by softening your butter, then adding the minced garlic, bread crumbs, brown sugar, oregano, black pepper, salt, and dried rosemary (after chopping up into smaller pieces). Mix well
    2. Rinse off your salmon and place on a sheet of aluminum foil. You can leave the skin on, this will peel right off. Generously coat with the butter mixture
    3. Tent up the foil so that it is not touching the top of the salmon, but sealed up. Place this in the fridge for about 20 minutes
    4. Place the foil on top of a baking tray and cook at 350 degrees for 20 minutes
    5. Serve and drip extra butter over top
