Everyone loves zeppolis, deep fried pizza dough with confectioners sugar on top. But there’s so much room to experiment, and while I worked at a pizzeria I was lucky enough to have some of the cooks make some kickass zeppolis. These hot cocoa zeppolis are definitely one of my favorites.
(If you work in a professional kitchen you should know that if the chocolate leaks out you’ll have to replace the oil, which I learned the hard way making M&M zeppolis. Boss wasn’t too happy about that. Oops)
Anyway, you can always make your own dough, but for the ease of it I picked up a pizza dough. If you get a good dough and let it rise you should be able to make about a dozen. I had a smaller, less ideal dough that wouldn’t rise so I only got 8 zeppolis. Try to go to a local pizzeria or bakery for a dough, not somewhere that they may have been frozen like a supermarket. They just don’t seem to rise right, and can get a hard crust on the outside while sitting.
(If you do get a dough in a bag from a supermarket, you want to kneed the dough into a ball so that it will rise properly.)
For this recipe you will need some sort of deep fryer. I have this deep fryer and it works great. For under $30 you can’t go wrong.
