    Jalapeno Bacon Potato Hash

    Kick up breakfast a notch and wake up with this Jalapeno Bacon Potato Hash.  There are a few things that make a perfect breakfast and this has them all – cooked in a cast iron skillet, with bacon, fried potato and onion and jalapeno for a nice kick.

    Even better, if you’ve tried my Pickled Jalapeno Recipe then you’ve already got the jalapenos.  They’re awesome and I put them in almost everything.

    Kitchen tools you’ll need:

    Cheese grater

    Cast iron skillet

    Now this is a man sized serving and should be dished out with some bacon and eggs, maybe toast if you don’t have anywhere to go.  Wanna kick it up even another notch?  Try squirting on some Frank’s hot sauce.

    Instructions
    1. Start off by shredding up your potato and onion You can leave the skin on the potato

    2. Cook your bacon nice and crispy. Dice up your bacon and jalapenos

    3. Mix the jalapenos, bacon, potato, onion, salt and pepper together

    4. Form into a ball and squeeze out the moisture. Use a paper towel to remove as much as possible

    5. Heat up a cast iron skillet with the olive oil and add the hash to the heated skillet

    6. Flatten out and form into a nice round circle if you want, cooking til brown then flipping
