What do you do when you go apple picking? You eat apples til you’re sick of them, you give apples to friends and family, and of course, you make apple pie. I’m not a huge fan of apple pie but I thought maybe if the dough to filling ratio was a little different I might like it more. So there came the idea for mini pies.
Mini Apple Pies
In a large pan, melt the butter on low-medium
Start with 4 medium sized apples
Peel off the skin and cut into even pieces, about 1/4" thick
Add the apple slices into the pan, and squeeze the juice from the lemon over the apple slices
Add the cinnamon, and mix well
Cook on low-medium heat for about 15 minutes, or until apple starts to soften
(You will need a cupcake pan for this. Spray it down with Pam.) Here comes the dirty part. Because we're using preformed pie crust, we have to cut and remold ourselves some new pieces. Personally I like the rough, uneven look, so I didn't go crazy putting the pieces together. As long as you have a bottom, sides, and about 2 inches left to fold over on top you'll be fine.
Fill to top with apple filling
Fold over the excess to make the top. It doesn't have to be perfect. And sprinkle with a touch of cinnamon
Bake for about 25 minutes or until golden brown at 350 degrees
Let rest 10 minutes and serve
