While usually I prefer to cook most of my meats on a smoker or bbq, sometimes you gotta do an easy cook in the oven. And the oven certainly has it’s benefits – it’s easy to keep temperature and avoid flare ups and you don’t have to leave your kitchen! The results are a super juicy, tasty roasted chicken with lemon.
This is a real easy recipe for flavorful, extremely juicy chicken. Total time is about 2 1/2 hours. We start off by making a flavored butter rub which not only helps crisp up the skin of the chicken but also gives flavor to the meat and vegetables.

Start off by letting a stick of butter sit out to soften. When it's at the point that you can mold it easily by hand you're ready to go. Mix your salt, pepper, garlic powder, paprika and rosemary in with the butter
You should have something similar to this
Now chop your potatoes, celery and carrots and put in a ceramic dish large enough to fit the vegetables and a chicken. Sprinkle a little more of each seasoning on top
Rub the butter herb mix onto the chicken and cover as much as you can. Don't worry, it'll taste better than it looks
Place the chicken on top of the vegetables and place in the oven at 350 degrees. Cook for 30 minutes and pull out
Pour the chicken broth around the bird into the vegetables. Slice one lemon in half and squeeze the juice over the bird. Slice the second lemon and place on top
Cook an additional hour
Now separate the chicken from the vegetables and place both back in the oven for an additional thirty minutes
At this point the skin should be crispy and internal temperature should be at least 165 degrees fahrenheit
