    This is another one of those easy, one skillet recipes which I love because they cleanup is so much easier!

    This is your basic cheese dip, with tons of possibilities to expand upon.

    A few things you could add would be ground sausage or beef (taco meat), extra salsa on top, avocado, black beans, sour cream, chunks of tomato, shredded cheddar, etc etc.

    1. Start out by heating up a cast iron skillet on your stovetop. Low-medium heat. Melt butter
    2. Dice up a small onion and add into the skillet. Cook about 5 minutes or until onions start to soften
    3. Add flour
    4. Add salsa
    5. Add corn (drain the water if using canned corn)
    6. Add cream cheese, and cook about 10 minutes or until cream cheese mixes in
    7. Chop up your cheddar and add pieces in, let sit for a few minutes and mix in. I recommend doing one block of cheese at a time
    8. When everything is mixed in, place inside your oven on Broil until top starts to bubble
    9. Chop up scallions
    10. Toss scallions on top and enjoy! (Be careful, the skillet handle is EXTREMELY hot)
