Sausage and Rigatoni ala Vodka
Before I start this one, I have to say – this is just an addition, not a full recipe. I have a great ala vodka recipe that I will post, but this is more of a quick dinner with some additions.
When I was growing up, my mom probably made some sort of pasta 3 or 4 nights a week. It was always your basic penne with Prego marinara, sometimes meat sauce. At some point it almost got me hating pasta, but after realizing there was more out there I quickly fell back in love with it.
Ingredients:
4 Italian sweet sausages
Small can tomato paste
3/4 jar Vodka sauce
3/4 box Rigatoni
1 large onion
4 pieces fresh garlic
Olive oil
Salt
Pepper
Start out by slowly cooking your sausage with some olive oil. I like to use a cast iron skillet but any frying pan will work. Once fully cooked, slice the sausage and remove to pan, along with some sliced onion and garlic.
Boil some water and start your pasta.
Saute your onion and garlic with the sausage and oil, adding salt and pepper to taste.
Add a can of tomato paste and 3/4 of a jar of Vodka sauce. Mix up and let simmer about 15 minutes.
When your pasta is cooked, drain and mix with the sauce.
Add some freshly grated cheese on top and enjoy!
